Paneer Kofta Curry

Ingredients:

  • 200g paneer, grated
  • 2 medium potatoes, boiled and mashed
  • 2 tablespoons corn flour
  • 1 tablespoon finely chopped cilantro leaves
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Mustard Oil for frying.

For Curry:

  • 2 tablespoons Mustard Oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, pureed
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to spice preference)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 1/4 cup heavy cream (optional)
  • Fresh cilantro leaves, for garnish

Instructions:

  • Combine the grated paneer, mashed potatoes, corn flour, chopped cilantro, ginger-garlic paste, cumin powder, red chilli powder and salt in a mixing bowl. Mix thoroughly to get a dough-like consistency.
  • Shape the mixture into small balls (koftas) and set them aside.
  • Heat the oil in a large skillet and cook the paneer koftas till golden brown. Remove and pat dry with a paper towel.
  • Heat mustard oil in a separate pan and sauté chopped onions till golden brown. Mix in the minced garlic and grated ginger. Sauté for a minute.
  • Add tomato puree, turmeric powder, cumin powder, coriander powder, red chilli powder, and salt. Cook, until the oil separates from the gravy.
  • Pour in the water and allow it to simmer for a few minutes to allow the flavours to mingle.
  • Gently drop the fried paneer koftas into the curry, making sure they are well submerged. Simmer for another 5 minutes.
  • Optional: For a creamy texture, stir in heavy cream.
  • Garnish with fresh cilantro leaves and serve hot with naan or steamed rice. Enjoy the flavorful curry with the melt-in-your-mouth paneer koftas!
