Honey Oatmeal Cookies
Ingredients:
- 1/2 cup butter, softened
- 1/2 cup raw honey
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups old-fashioned rolled oats
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- Dry raisins or any dry fruits (optional)
- 1/2 teaspoon salt
Preparation:
- Preheat the oven to 180°C
- In a large bowl, cream together the butter and honey
- Beat in the egg and vanilla
- In a separate bowl, combine the oats, flour, baking soda, and salt
- Add the dry ingredients to the wet ingredients and mix until well combined. If you are adding dry fruits, mix them at this stage
- Drop tablespoons of dough onto a greased baking sheet
- Bake for 10-12 minutes, or until the cookies are lightly golden brown
